Dolberg first arrived at Ajax in 2015, aged just seventeen. He came from Silkeborg IF in his native Denmark and joined Ajax's top youth team, then still called the A1. In his debut season, he also featured in the UEFA Youth League, where he reached the quarter-finals. During the winter break, Dolberg was invited to the Ajax first team's training camp.
The 2016/2017 season was Dolberg's real breakthrough. He made his senior debut at the end of July in the European home tie against PAOK. In that debut season, he played 48 matches, scoring 23 goals, and was named Eredivisie Talent of the Year. Ajax also reached the final of the UEFA Europa League, losing in Stockholm to Manchester United.
On the road to that final, Dolberg scored the opener in the away leg of the semi-final at Olympique Lyon. Ajax would lose 3–1, but the final was secured thanks to their 4–1 home win. His goal echoed over Ajax Radio.
In terms of silverware, Dolberg's third season at Ajax, 2018/2019, was hugely successful. Ajax became league champions, lifted the Dutch Cup, and enjoyed a stunning European campaign. Under Erik ten Hag, Ajax came within a whisker of reaching the UEFA Champions League final.
On July 27, 2019, Dolberg struck after just over thirty seconds in the Johan Cruijff Shield against PSV. The Dane finished off a pass from Donny van de Beek, and Ajax went on to claim the first trophy of the season with a 2–0 win.
After 119 official appearances for the Ajax first team and 45 goals, Dolberg's first spell at the club ended. In the summer of 2019, he moved on to OGC Nice. Later, he would also play in Spain (Sevilla), Germany (Hoffenheim), and Belgium (Anderlecht). For the latter, Dolberg netted eighteen league goals last season.
